Please someone explain me how to know which bar shows tier 2 and tier 3 crops?

- what bar does show tier 2 and 3 cereal?
- What bar does show tier 2 and 3 cabbage?
- What bar does show tier 2 and 3 pumpkin?
- what bar does show tier 2 and 3 cotton?

By going to the agriculture page and reading it.

There's even an in game tooltip that shows you exactly what to grow to get tier 2/3 crops...

Read the page I posted.
The type of product produced by a field is determined by the sum of the two influences values used by the crop (the values given are the percentage of the influence meter filled, so if both meters are completely filled, the total influence would be 200%):
if the total influence is between 0% and 50% the field produces all tier 1 products.
if the total influence is between 50% and 100% the field produces both tier 1 and tier 2 products.
if the total influence is between 100% and 150% the field produces tier 2 products.
if the total influence is between 150% and 200%, the field produces both tier 2 and tier 3 products.

The tier 2 product produced is determined by the higher of the two influences (the product order in the previous table shows the tier 2 product with the lower numbered influence first).

Not shown on the graph is corn, which yields blue corn on cotton bar and white corn on cabbage bar.
