What is the benefit of having more than 5 braziers?
Could someone elaborate a bit on why and how it is useful to stack more and more braziers into an area?
And what kind of amounts should I be aiming towards?

But there are other points, too. There could be more than one attacker, so you need more braziers to attack all of them with the maximum of five, then some of your braziers could run out of ammo and other braziers could take over and last there's always the psychological effect of having to face a wall of braziers.
Depending on the size and value of your claim (a lot of metal chests, cupboards and high purity stuff for example attracts raiders) you should add a lot more braziers, the more the better. Calculate the number of braziers it would take to build a wall around your claim and build that much braziers, then you should be on the save side. Less should probably do it, too, depending on how many enemies you have and how good the braziers are placed/general layout of your base.

My number is from sevenless' beginners' guide. I never have raided anyone nor have been raided, so I cannot confirm this by personal experience.
Edit: I haven't played Salem for long, so I only have around 60 braziers for ~3000m², the defended area is only 1600m² though, the outer areas only contain low value stuff like coal clamps, but are in reach of the braziers of course. I intend to at least double that figure and build new braziers on a regular basis. My claim doesn't contain much of value, so any raider would probably lose more than he gained (braziers do permanent damage) which is the goal of my defense. I don't commit any crimes either.

What do you mean by that? I was under the impression that food was neccesary only to regenerate when raiding a brazier infested area and black bile would not permanently be cut down. .. Are you saying that raiding someone will decrease your black bile permanently and you need to enter gluttony mode to raise it back up?

15 braziers is certainly a decent amount, a 400ish bile char can only destroy around 3 braziers a go then.
