You'll be fine on any server if you just ally with whatever group is in power. Make friends with the tribe on plymouth, or candy gang on roanoke. Jamestown is a bit more of a free for all, but with no really strong groups, a good wall of braziers is much more likely to keep you safe.

some little steps to live pacifically:

1) skill yourself with random forageables, don't mind if you go far from leanto
2) build and house and a claim in a nice place
3) make principal needs like food (agriculture), flattering and a makeshift fence
4) add walls and make some braziers


PS: plan before how you want to make your home like, that will help a lot
PPS: if you don't want to hunt, enjoy berries!
PPPS: you'll need to cut trees, earn forestry and plant them again
