Here are some structure sizes I've collected in game:

Compost Bin: 1x1
Kiln: 3x3
Gardening Pots: 1x1
Till Fields: 4x4
Wooden Box: 2x1
Coal Clump: 3x3
Clay Trough: 3x1
Whittler's Bench: 1x1
Sawbuck: 2x1
Fireplace: 1x1
Leanto: 3x1

These are incorrect. You can stack both much closer than that

And I think Compost Bin's are 1 x 1,5.
I managed to place two bin's side by side in 1 x 3 area.

I am not sure if you are correct to assume that all hitboxes are rectangular

They are, because the game engine only supports rectangular hitboxes. I know because I complained about windmill's hitbox :(
