The time they take to cut down is static, humours don't improve the cutting rate. So while a split rail fence might take the same time to bash for a 50 humour character, think how long it'll take a 500 humour character to mulch through it (numbers made up). Furthermore, when you cut a tree down there's none of the splash damage problem you get with normal walls. This lets you stack walls more effectively than regular wall types.
It's been neat to see the evolution of a game. Salem has come so far, and still has far to go. Although frustrating, I think it's been an experience worth the effort.
