It does look like this, yeah. It still could just be the RNG messing with us though.

I really don't think animals or walking past a board pile has any effect. Neither does the terrain. I put my board piles in the midst of my farms and walk all over near them and have still sometimes gotten 100% from a pile. But then, sometimes I get 50% from a pile placed exactly where the previous one gave me 100%.

It seems to me (and this is speculation) that when a board pile hits 'dry' stage, it checks for influences in the area that might cause mold and then runs a RNG for each board. If the mold chance is say 30%, each board gets checked and has a 30% chance of becoming moldy so you might get 100% good with luck, or you might get crappy rolls.

Oh excellent - you place yours in your farms? I like that option the best :) Already using up that space anyway lol ... I used to stuff my coal clamps on my farmland. Wonder if coal clamps negatively affect the timber piles... hell if anything the dry smoke and heat should make them a positive influence to nearby timber piles!!
