I meant a similar issue with D3D trying to take over. It would help to explain the odd behavior with Aero and alt + tab.
My guess is that it is driver related and possibly Windows 7 (maybe Vista) exclusive.

I'm permitted to poke around the client, right?

Is there an old topic where someone has already tried some things? My searches have yielded no results.

Nope, nobody has really tried any of this and reported it that I'm aware of.

To note, the article I linked are strictly command line switches for Java or can be set as environment variables. Feel free to try them out and see if any work.

It is definitely not exclusive to 7 or Vista, at least. People have reported it failing on pretty much any operating system, so using Windows 7 is not a necessary condition for fullscreen failure. It is not a sufficient condition either, because I have verified it to work on at least some Windows 7 systems. Thus far, I haven't managed to recognize any conditions for it whatever.
