If you want an honest answer:
a) Walls just arnt effective, the time taken to put them up versus their benefits is a poor trade-off.
b) They don't look very nice. It might surprise people who play the game purely to grief, but building an aesthetically pleasing village is important to some people. Up to three walls gives a place a nice border but more than that starts to look silly.
c) Having to click 10 gates to go anywhere is a pain.
d) Building additional walls gives lower and lower marginal benefit, even worse with braziers. If someone is prepared to put the time in/has the capability to take down your defenses then generally you want to increase them by at least an order of magnitude. That means going from 3/4 walls to 30/40 walls which is completely impractical.
e) Investing serious time in the buggy/exploity types of defense could be a complete waste of time as those bugs could be fixed and you are left with no defense. Not to mention most look awful.
f) Building more than a few walls isn't much fun.
As for why do people build townhouses? Well they look nice, there isn't any game reason afaik not to just build a pilgrims hovel for the stove as i can't think of any other benefit of having an expensive house. That said a townhouse really isn't hard to build at all.
