My sailor's knife has those notches and they are used to cut twine.

here is one of mine made by a local smith, as you can tell by the picture it has a significant "float value"

(and no before someone asks there is not any rust on the knife  the brown ****/smudges are leather scuff from the sheath that i did not feel like cleaning off)

I naturally assumed they were blood stains. I am so disappointed.

That blades nice, but that handle though. Very nice.

I like the handle. Antler?

I'd guess a bit of antler and a bit of bone. I got a soft spot for good bone carving.

Speaking of not great handles though...

The damage to the handle and sheath of this U.S. Mark 1 are my stepbrothers doing. No respect for the property of others. Fortunately, I've since fixed the handle and cleaned the blade up. It's for general use.

For cooking though,

I've got a set of Chicago Cutlery. Simple, utilitarian, and sharp as hell if you take good care of them. Not fancy like Meows, but it gets the job done. Most of my knife work in the kitchen is done with the knife pictured above.

Holy crap, why are the pictures so big....

not a good one tbh :( I dropped it and made the conscious decision not to try and catch it with my foot. It hit the floor and literally an inch of it snapped off the top
was literally one of the hardest decisions I have made
