I read that field seeds have different Purity like Lead etc. so what is the difference?

Selective planting. You plant couple of fields, and they get products of different alchemical composition. You choose the ones with desired omposition to replant. You keep repeating this and over time you get and better products

If I am running a small hermit farm, does it make more sense to simply raise purity (thus the multiplier) rather than worry about which element I am raising (at least to start)?

I would advise against it. In the end you will end up raising purity in single alchemical component. Which will mean that over time some foods will become better and some others will become worse.

For example pumpkin pies with salt purity are ******. But with mercury purity they are great.
Or mushroom pies with sulphur purity are 2x worse than with mercury purity.
Or aspen with salt / mercury purity can be used only to raise blood, but with sulphur / lead only to raise BB

So if I am going to raise all four elements for five crops, it sounds like I need a boatload of tilled fields -- my 16 fields just won't cut it.

Look and see what food you want. Cereals you want to have all the colors just about.
