from what depend turkey coop quality on building? From every material or just hay?

I think ressources use to build the coop doesnt have any impact.
Coop purity slowly increase overtime.

Turkey Coops now have a Purity which is displayed below their Inventory.

The purity of the Turkey Egg will now be a combination of the Turkey Coop, the Hen and the Gobbler.

Each time a Poult of higher purity than the coop is raised in the coop, the purity of the coop will rise slightly. As with other structures, the coop cannot drop in Purity and will greatly lower the purity of its produce if you try to place high purity turkeys in a low purity coop.

from this mean that after my coop reach my turkeys purity (10%) then it will stop, because as you said turkey egg its combination of coop/hen/gobler purity, that mena if they are all 10% then i will no get any better egg than 10%

From my experience, the eggs they lay varies in purity, they could be lower, but they could also be higher, think its ~1% it varies from the average of the pen?
Just replace the lower purity ones in your coop if the one hatched is higher purity, and over time it will incease.

Your turkeys will lay eggs that are slightly higher or lower purity than themselves. Higher purity eggs will add to the coop purity so it will all rise over time if you keep trading out low purity turkeys for higher ones.

It wouldn't be a grind if you didn't grind it out. You can partially speed it up by buying higher purity turkeys. It slows the process of the purity increase of the coop but it balances out eventually.
