As you all know, feeding a cricket 3x Royal Jelly will turn it into this huge cricket with a smiley on his face. Riding it around can be quite useful, but expensive to replenish the Jelly supplies.
If I log out while mounted on the cricket, will I still remain mounted if I log back in say, 24hours later?

I don't think you will be able to actually log out of the game. If you do then the cricket wouldn't with you.

He "accidently" logged out on a cricket mount and couldn't log back in because of said mount. After a bit (how long? who knows?) the cricket despawned. According to him anyway.
