Why would you lose them? JC typically doesn't roll back.

I'm 95% certain that when the server comes back up everyone is logged out (not sure about criminals) but if you were in a fight with an animal I believe the animal will be despawned. I certainly hope so because getting KO'd by a rat and losing the stuff in my inventory at the minute would really hurt. Of course I can just pick the stuff back up if I happen to be around and notice as soon as the server is restarted, apart from the stuff that will be under the brick wall and brazier I am stood near.

If its shallow then you should just log back in.

When a server crash the world ceases to be, players and mobs get "despawned" equally. And criminals gets released from the stocks. This should be obvious, the game doesn't continue to exist in some magical place when the server that simulates it stops working.
