Because logs are for boards. That's a waste of logs to gather woodblocks from it when you have so much block piles all around !
To develop a bit more... The trees I plant wont go into wood choopings, or any item made from woodblocks except coal.
So I would need to ruin the beautiful forest that surrounds me to be able to stockpile woodblocks in a way that doesn't take too much room in my chests etc. I'm already ruining that forest enough with the need for boards, so I'd rather just gather woodblocks from the piles in the forest than chop every tree on my way.
I recognize that it's a choice of mine and not a gameplay limitation; although coal can be stored in coal camps and boards in logs aswell; and I honestly believe to need more woodblocks everyday than boards, bricks or granite. It's all a matter of what's practical and it would really be awesomely pratictal to be able to store woodblocks too.
