This can work quite well if the cost to buy the stalls was lowered to 10-20% of the cost now. You buy the stall - you still pay 35% tax all week - exactly one week later stall goes poof and any unwithdrawn funds go into your bank account - for free. That gives everyone a chance to be quick and buy one every week. Given that all the stalls will end up on slightly different timers - over time there will be stalls becoming available many times a day. You could even put a timer on them for full disclosure.
It will also give a lot of tears and a fun mini game of who can buy stall the fastest.
Given my current ownership of 2 stalls I can't believe i'm advocating for this.
I do think you should be allowed to adjust prices in an infinite range if the items are going to automatically purge once a week. You could see some gamesmanship on more expensive items - I wait to buy until last minute cause I know the seller will be there lowering the price to get it to move before it goes poof.
Regardless - simplest thing is no sales in 3 weeks = lost stall.
