Swords and turkeys purity

Hi, could someone please explain me if the sword's purity have any use? And how could I raise the purity of the turkeys? Because I have been feeding them with meat with some purity, but the coop aether remains at 0%.

Coop purity only raises with the laying/hatching of each egg.
