where do I actually find turkeys? to start a coop.

Coniferous forests tend to be the best areas to find them.

guess i need to explore more.

Also learning the turkey trait helps find them (Pure guess as I'm new and didn't test. But the test on the skill Turkey Hunting seems promising)

Instead of guessing, stick to known facts. Theories are nice when the whole community is trying to figure something out, but this is a known issue.
