I've only just started playing the game, but every time I try to wander around and look for resources, I am attacked by snakes. Apparently I can't run away from them, as they chase me across the entire world (as real snakes are known to do). I also can't hit them, either by punching or using the axe I'm carrying. The thing just keeps chasing me and biting me until I'm knocked out.

Is there something I can do to kill them, or at least get away?

if you click on the crossed swords in the upper right of your screen, the snake will eventually give up on you. If you run just a little and then wander, the snake shouldn't be able to catch up to you. So you can just keep wandering until you're out of combat. If there's water nearby, go to that, snakes can't cross even shallow water.

So, no way to beat up a snake? Can't use a stick or something? I'm surprised the axe I made serves no purpose for killing a snake.

they can be killed. I found it odd you can't use an axe as a weapon too. I've never tried punching one, so i don't know why you aren't able to. I bull run at them, that way they die before they can bite me. Until you can kill it in one hit, it's best just to avoid them.

Unless you're strong enough to kill em with one punch then it's probably best just to run like hell or avoid them all together. At the very least, wait until you get stomp so that you can stun them first. Otherwise you're most likely just going to trade blows with them and one bite from a snake will poison you and knock you out regardless of whether you win.

Or just run to some water. Wait for the snake to stop on the shore. Get close to eat, but not close enough for it to hit you. And then spam stomp until it's dead

Have you learned the skill self defense yet? That may explain why you cannot fight them. This skill gives you the first basic combat attack. Better attacks come from more advanced skills.

small game hunting is required for (i think) rabbits/crickets/snakes

It's required to attack them, but you can defend yourself against anything that attacks you first.
