i'm planning to make my base on a sloped area, so i have to dig a lot to make flat spaces. i'm trying to plan in advance where my stone walls will eventually go. how much of a slope can they be built on? how much space do i need around them before there is a slope/very steep slope?
can trees be planted on slopes? on steep slopes?
also i'm planning to use the mine on my claim for storage space. if someone breaks in, can they destroy my mine? and if they did, what will happen to my stuff that's in there?

When you build on a slope it's always better to build a makeshift fence to see if it can be built. Then destroy it and build your stone wall. i don't think people can help you with the space/slope needed to build. Also use enders client if you are not, ctrl+f really helps for digging.
I don't know about the mine.

I had to dig for a few weeks to flatten my place. Once the wall is laid, the sloped hillside can start rising up immediately next to it. I preferred to make everythiong perfectly level because I dont like the look of walls built on uneven ground, with pieces sticking up all over on top of the wall.
You can plant trees on slopes, but there is a small amount of collision you will run into when trying to drop a tree to plant it. Being too close to another tree, fence, etc,. will cause you to run into an invis placeholder so you cannot drop the tree.
The Ender's client is invaluable using the CTRL L option to map out ground elevations for terraforming.
