Purity and Multiplier

I'm looking for some better water for baking..
I have:
18.23 / 41.26 / 19.74 / 20.78
x1.43 - 4% Pure
I found some:
14.24 / 41.01 / 26.49 / 18.26
x1.50 - 5% Pure
Which one is better for baking Merc food? Should I look for highest Merc content or highest multiplier?

"High Mercury" is the simplest and most effective approach. The more similar the elements of ingredients are to each other, the less purity you will lose by combining them. You will only gain a benefit from the 5% water if your other ingredients are also rich in Sulfur.
Since trying to optimize more than one element at a time is rather...difficult, your ingredients probably only have the common ground of "high mercury", and so you should just seek to maximize that one thing.
However, given that the differences in mercury between the 4% and 5% waters are so slight (00.25), there's really no problem with the 5% stuff.
The end results from crafting will be virtually indistinguishable.

Also have a wander round where you collect your water from, in the area I fetch my water from I have variance of 1-5% within a short walk, make sure you are getting the best water there is..
