I just noticed that I can place fields that extend underneath structures and walls. Is there any penalty to doing this, or is this a good way to make maximal use of your land?

There are no penalties as far as I can tell.

It probably falls under the same category as that 1x1 field exploit where you should do it AT RISK. You never know if some day the devs decide to implement code to either introduce penalties to overlapping fields or outright wipe them

It does not affect yields.
If this gets nuked I would cry.

Please refer to the relevant Announcements thread before telling someone that something may or may not be broken. This was explicitly allowed when the fields were fixed.
Game Development: In the Shadow of PixelsAt some point jorb does explain the field changes a bit more in depth.

I cannot find the post that you alluded to, but I think I'll just work with the principle of : "If it still works after the 'get rid of field-bugs' update, then it's likely to stay."
