You can't shoot over stuff that you can't walk through
16 is safe to fight until you get use to them.

16 of blood and YB each? And what about crushing construction posts?

Stomping nearby an animal who is mysteriously respectful of property rights until it falls unconscious from the shockwaves is a time-honored and ancient hunting technique.
Engaging a deer in close-quarters combat with only 16 blood is inadvisable unless you are already a master of combat. Their charge attack does 10 damage in one blow, and the art of deer-punching is mostly about how to avoid being charged. (The easiest way to not get charged though is to unplug yourself from the wall socket.)

Yeah deer do 10 dmg with their charge attack (which is quicker than you can run), and 4 damage with their regular hits to me. It takes me bout 5-6 stomps to kill them with 20 yellow bile, and by that time I'd surely be dead if I fought them head-on. Best to lure them to your fence, close the gate and stomp away.

How about conventional deer hunting, without using exploits like fences or signs. What would you say is the bear minimum for deer combat and what tactics should be employed?
I just got my humors up to around 27 and I also just learned Fencing. Is this enough to start deer hunting? How should I handle them? I assume I want to constantly stay close to the deer so they dont charge me, but how do I prevent him from dodging my thrusts? Can I use parry to block deer attacks?

With a sabre I can hunt them just fine with 22 bl/yb, though it can go disastrous if you don't stay on their tail as they try to reposition to charge you again. Wait until they get stuck on you as you're following them, then stab.

27 Humours is probably enough, but the real variable is in how well you manage to prevent charging. I just killed 2 Deer in a row with 45 Humours, but then messed up fighting a 3rd which KO'd me.
If you don't think you can out-maneuver the Deer, use the "Guard" action to cut its damage in half. A 5 damage charge is much more tolerable than 10.
