If i chop down the forest near me, will spawns stop? Such as the forest spawns?

No they won't, but remember that re-spawns depend somewhat on how often that tile is refreshed. So if it's near to you and viewed and reloaded very often then spawns slow way down.

so therefore amount of trees does not have any effect on the spawns in a forest, correct?

Actually, it slightly does, but indirectly. If you cut down whole forest then plains might start spreading there, and plains have different spawns than forest

Practically no. It would take a lot of time for enough terrain to turn into plains. Months maybe
