You get the same amount of meat, but there are some useful recipes that require steaks (e.g., simple sunday steak) so this is a good thing.
On the topic of splitting, you can also make meat shreds from cuts, which are useful in other recipes (I make lots and lots of Lumberjack Frikadel as my primary food these days -- 9.5 for each humour).
