I planted some nut trees, two to three months ago and they still didn't replenish.

Do they also need to be polinated by bees or butterflies like the fruit trees?

not sure what the reason for this is, but it is much faster to chop them down and plant new trees than to wait for them to replenish.

Decay hits happen only when the map tile is loaded. Keeping an alt logged in 24/7 helps.
Depending on what purity are your trees, if they are 70% or less it makes sense to chop down and replace with better ones.
The alternative is to plant tens of trees and hope that a few will replenish daily.
