Hey Salem...

I currently have the listed pre-requisites for this skill Game Meats, but it's not listed on my skill list as available.

The only possibility that I can see, is maybe it requires me to have Butcher's Thrift? Ultimately I'm trying to get to French Cuisine.

I think that'd be it. Definitely don't need butcher's thrift.

Slug Hunting or one of the other foraging skills maybe? Assuming you have what's listed already.

French Cuisine unlock Slug Hunting.

Well, so much for that idea. :/ Guess I should have looked it up first.

I don't recall exactly, but I know I didn't get it until after I had a farm up and all of the currently available foraging skills.

Game meats is the skill that gives steaks when hunting. It seems reasonable that Big Game hunting is a pre-req. I remember having this problem myself and BGH is the only skill I can really think of that's relevant that I got before it unlocked.

I don't have Game Meats and I get steaks from animals including deer and bear.

Mmm, must be remembering wrong. That'd be butchery that unlocks it now I guess?

I believe french cuisine is unlocked after you get slug hunting, and venison cuisine is unlocked after you get all of the butchery skills. The various butchery skills allow you to cut even more cuts/steaks from the animals, they don't neccessarily unlock different items.

No, Slug Hunting is definitely after French Cuisine. I'm the one that originally put it on the wiki and I was tracking what I was getting every time I bought a skill very closely.
