I have a character that has "Fruit Orchards". I have planted fruit and grown trees. I planted the trees and put both bees (who have been gathering and making honey) and butterflies by the trees. The trees have gone thru a "cold snap" and are now in Everbloom. So, how and when do I harvest the fruit?

Also, I've been told that you can plant rotten fruit and grow trees from them. Is that true?

The trees will bloom and when they get pollinated they will get spawn fruit on them.
Pretty simple, just be patient.
Anyone can pick fruits from the trees, you only need to have a skill to plant them in the pots.
Rotten fruit is used as a fertilizer , nothing more.

throw it at players in the stocks

It's still meh. Gives a small F&F to stocked players and you get 1 justice point.
I'd rather use big reds.

This is slightly incorrect, rotten fruit gives I believe 4 points per.
