I think the coarse salt starts decreasing purity first in certain increments, then once the purity gets to 0% it takes another ~2 coarse salts to destroy it.
I think this is so that high purity fields are slightly more inconvenient to grief. Similar mechanic with turkey coops except with smelling salts instead.
