I can't kill beavers

So I'm sort of "stuck" in this phase where leather is almost essential in every crafting, but I can't manage to get it. I'm very weak and I die against beavers. What should I get to defeat Beavers?
I can't seem to increase yellow bile either, would you guys recommend good / easy-to-get items for me to glutton thus I increase my yellow bile?
Should I get a new weapon? (I've only got the slingshot and uppercut ability). What should I get? What gear is recommendable for me to evolve in the game?
Edit: I actually died against a beaver, despite my inventory being dropped, did I get any other penalty?

You, i presume, didn't die unless it was a blood moon. If season wasn't blood moon then you merely got knocked out, which isn't quite as severe.
You need to engage them with full blood bile bar, so as to be at full health and be able to take as many hits although none would be preferable. I suggest you get the combat skills learnt quickly as they are very useful, backalley pugilism, bug hunting, quick moves or whatever it's called. Aim a bullrun to intercept them, then uppercut and run away if too low in total yellow bile for that combo to kill them. Then get some distance and either time a stomp to stun them before they reach you or bullrun them as they come right at you. Learn to dodge their dance and make sure to distance them from others in the pack.
As for gear, it's not that important until you learn fencing and get a sword. Either way it's not really necessary that you get that and you should instead use the wiki to check out which types of ingredients give yellow bile modifiers to raise that, along with blood to be more sturdy.
Off the top of my head any berry food taking "any berry" with huckleberry as the ingredient. Any meat food with deer as the ingredient. And following the pattern, pine nuts, slugs, green cabbage, lobster mushroom / boiled morels and more on the wiki.
Easiest way to do it at really low humours is to craft anything with solely yellow bile gain, or alternatively if you're too much of a beginner to differentiate between foraged foods, cook the following :
Filet on the rocks with filet of either gold pickerel or shin spinner.
Garlic mushrooms with either boiled morels or lobster mushroom
Garlic rabbit (not sure it's the right one but whatever) with deer meat
Froghetti with slugs as the ingredient
Autumn delight with pine nuts.
Cook all of those, any three of them, but only one of each type, get 3 points, stop feasting session and wait out the short timer. Then when you can eat again repeat. Don't get your yellow bile too far ahead though or it'll be a pain to catch up the others.

I first started farming beavers when i learned Clubbing.
I opened with bullrush (if it missed, i just recovered and tried again) , on a successful hit i would swing the club twice, followed by an uppercut, at which point they would die (unless i engaged with lower yellow).
If you´re still unable to kill them, and need alot of leather, i recommend killing rabbits instead and making their hide into leather.

- Well, if I can't kill beavers, I can't kill
deers for sure :p
As for the other advices I'm very grateful. I'll try to balance my biles, at this very moment I'm 13 at everything except yellow bile, which is at 1

roasted pine nuts from collected pine cones and huckleberries can increase your yellow. Despite others statements about beavers I approached them a little different. Because your low biles I would keep guard up to defend yourself. Next I would simply walk up to the beaver and hit him with a club continue to hit him with the club and try to slip a stomp in if you can. If you can manage to club him two to three times you can upper cut him for a large amount of damage. The club increases real on a target. The higher the real the higher damage your uppercut will do. I was able to kill beavers at 20 or less biles using that strategy.

I need Brains in order to make leather, and rabbits won't drop them, thanks for the Clubbing though

Just an extra bit of advice, watch out for the long timers on things like Froghetti. At your levels, you might be fine with a roasted grub and a roasted pine nut alone for a point, and the wait for the timer to wear off will be much less and might disappear entirely if you can get 3 points.
And it's time consuming, but you can get tanning fluid from boiling Birch bark if you have issues getting brains.

Actually, if you´re planning to play longer sessions, Froghetti may actually be good.
I did rather long sesions when i just started, and i kept several froghetti around, and just gobbled 1 whenever the gobble timer was done for a guaranteed point(sometimes 2 if lucky)
It does slowly increase the yellow over time that way, ofcourse it´s definatly not the most efficient, but it works!
I belive its timer was ~15m of well fed.

You can accomplish that with Froghetti, Filet on rocks, and a couple green seafood salads to get a even three point session that even when it is not as quick you can still average a 3 point session every hour if you are playing for hours at a time it is a faster more efficient way.

For low biles I use to eat only 3 foods that gave me 3 gluttony points and thanks to the timer reduction, I would have like a 6 min timer. Before next gluttony session.
As said before :
Froghetti
Garlic mushroom
Garlic rabbit
Autumn delight.
Those 4 food give easily around 40 biles for gluttony, give a 15min timer, with 90% chance to reduce food efficiency (that s why you should stop after 3)
Try to eat only 3 and look at your timer, it should be around 6 min.
Stop your gluttony and you can start again soon.
Basically 3 humors every 6 min is not so bad.

Ps: Dont forget to boil the mushrooms.
