From what i get you need Flora & Fauna, Stocks & Cultivar and Natural Philosophy for farming.

And you need Herbs & Sprouts for most stuff you plant into pots.

My questions are:
how does hunting & hideworking effect any of this? It says it caps Herb purity, so are the herbs planted in pots counted for that too?

Or how should I build a proper farmer character?

and does a miner need anything besides mines & mountains and sparks & embers?

also what kind of "jobs" are there? tailor, farmer, miner, fighter or so?

Stocks & Cultivar you need for plenty of the harvest
Herbs & Sprouts each 50 will increase your chance to get + 1 in the pot
Hammer And nails increase the amount of planks you can get from tree
Sparks And Embers will increase the amount of charcoal you get

If you have a mining operation, just make some containers to put your dross in after you make pig iron. Then add a dross to a field to give it +200% speed.

Don't put straight coal on fields; it gives +speed and -plenty, so it's not really helping you. But using coal to make pig iron and then using the dross byproduct on your fields is a great idea.
