It's true, if you eat only neutral things like Berry Salad or mixed ingredient variable food, your humors might become unbalanced. You're still low enough humors though that even if you have no base yet, you can fix this.
For your Berries group, you can Blackberries for BB, Huckleberries for YB, and Crowberries for Phlegm. Blackberries are easiest to find as the bushes are everywhere, so make some Berries on a Straw with them, and that will get you a little Black Bile, though not enough. You can also use that Berry Salad as a 'base' food to add to your bars; one won't put you over the top anymore.
For the Mushrooms, Lavender Blewits add to Phlegm and Sugar Caps add to both Phlegm and Black Bile so you can use it to help you with either stat. Shrooms on a Stick is a very simple recipe that will get you a good bit of bars still.
For your Nuts and Seeds group, Acorn does Phlegm, Pine does YB and Hickory does BB. The easiest thing to make is Autumn Delight, but Salty Nuts is also a great one.
For your Slugs and Bugs, Phlegm comes from Snails, YB comes from Grubs, and BB comes from Beetles. Grubs are super easy to find under boulders, just lift them up. Froghetti is super easy to make, and so is Virginian Shellroast if you have lots of snails. Three Virginians is also good, but it's another neutral recipe like the Berry Salad, so keep that in mind.
In your situation, to correct your problem, my suggestion is to make Froghetti from Grubs for your Yellow Bile. That will give you one point of Yellow Bile each session, but completely ruin your Slugs and Bugs so if you try any other bug foods, do those first. For your Phlegm, use an Autumn Delight made from Acorn, same situation as with the Froghetti though. For your Black Bile, do Blackberry Berry on a Straw, Sugar Cap Shroom on a Stick.
So, the simplest session for you to get balanced again would be to get Black Bile first each time using berries on a straw, shrooms on a stick and maybe a Berry Salad to put you over the top. I think you'd also be safe to use a hickory Salty Nuts or maybe a raw blackberry depending how your berry group is looking. Then, eat a single Grub Froghetti for your Yellow Bile and a single acorn Autumn Delight for your Phlegm. And then end your session. You should have only about a half hour or so to wait till you can do it again. Just keep going with the same foods until you've reached 25 Black Bile.
Then start experimenting with new foods, and have a look at the wikis. They're not completely accurate, but they tell you what you need to know about variable foods, at least. And a bit more about Gluttony.
