How do stone quarries in Providence work?

Hello, I was wondering how stone quarries in Providence work. There are always quite a few boulders around, but the quarries themselves look pretty level with the land around them. I would expect they would be dug out entirely by now.

Do these quarries reset when the server is reset, or when there is a patch?

No, the boulders you get from them are just large enough that you don't notice the difference in level from even several dozen being dug up. Nothing in the terrain ever resets.
