because hunting rats is much easier when a witch: they won't aggro you.
I dare say the rat team is hardly the biggest perk to being a witch

It also likely never crosses the mind of any decent pilgrim to tie rats together and study its effects lol, Only the twisted mind of a witch can fathom such a use for rat corpses.
