I think if you're inexperienced with fighting, you need at least 30 Blood, and about the same YB - so you can take 3 (of the worst) hits of 10 damage.
Deer can have an attack of 10 damage. Say you attack them, they attack back but then you miss and they hit again. You really need the blood to survive the 'worst case' I think.

Can their attacks be parried?

I do not know. I have never successfully used parry in combat.

I agree. 30+ blood is best to be safe.

What does parry do? I have not used it successfully in combat and the wiki contains nothing (yet).

A well timed parry will completely neutralize the damage from an opponents attacked. I'm not too sure if it works on animals though. I suck at it and the times I thought it worked, the animal might have just missed its hit by itself. It needs more testing.

Is it difficult to keep close to the deer to prevent it from charging? Would you have to be in Wander mode instead of Guard to be able to keep up with it?

I started with deer hunting at 20 and at 25 humors it's pretty much manageable if you have fencing and use guard, instead of wander. Deers behave very different if you use guard and they don't run as much. Even if they charge you they will deal 5 damage to which you can respond with a thrust. If you don't miss often you should be able to kill it sooner than it can ko you with their 5 damage charges. Just try to stay close and face them. Wait for them to stop and then thrust, or just after they attack you. Don't try thrusting as they move.
I was using various tactics and have been ko'd by deers too many times and 'guard' worked like charm for me.

As about parry, i don't think you would be able to use it properly while moving and deers are unpredictible. Sometimes they just stand there and let you stab them and other times they charge you three times instead.
