is there an option to quickly place items in the build menu without having to click and drag the items in?
if so, what are the keybinds for it?

shift+ scroll up or down with the mouse wheel while hovering over the material on the build window to insert and remove materials.

Also, holding ALT + Shift/Ctrl will move/remove all items of that type.

Just learned this the other day after months of playing, boy is it a time saver.
