You have a great point there, but how else would you get the humus out?
Think of it more as feeding fuel into the structure. It then functions identically as every other building in the game that has to be "fueled" somehow--tanning tubs, smelters, ovens, etc. It's one of the idiosyncrasies we've all learned to use.
