So I have taken over a left behind mine that was full of copper boulders in the small square entrance area, not much had been mined and no visible veins were to be seen. I cleared out the copper nuggets and then started to mine, when I found a vein, it was iron ore not copper. So my question is, do mines have different ore veins within the same shaft? Was there copper to start and now iron? I was excited that I had found a copper mine, but now I wonder.

The visually different mine nodes are a leftover from the old system. Any metal node (iron/copper) has all types now (iron/copper/silver), but they also hold tons and tons of rubble, that won 't give you bars.

Does that mean I can chip an iron ore and a copper ore from the same place back to back?

it depends on the tile you mine:



left is iron, right is rubble.
Copper will have a yellow/orange vein through it, and silver will have a blue vein.
The boulders you pull from them differ too:

couple of copper

a bit of rubble with one iron boulder

and a couple of silver boulders
