Whenever a cougar aggros me i just let it KO me. There's no way i'm going to fight it off or dodge it.

I'd always jump or simply dodge when it initiates a pounce and quickly stomp then do a thrust or two. If strong, just a few dodges and stomps should do the trick if you have an enduring YB, but I'd recommend to rather bring a sabre with you instead. Repeat if you can't put him down after the first round of engagement.

Once you get the hang of it, it won't be as much as difficult and it'll almost be like you're going out rabbit hunting.

Right this is how you should do it.

Run, find a tree, run behind it, wait for the cougar to get close and he meneuvers around the tree, this is the time to stomp him. Quickly stab him once, then run to the next tree.

most important part, don't stomp when you're in open ground. It'll pounce on you faster than you would believe.
Also, its attacks do more damage the stronger your bleed debuff is. Something to keep in mind as well when fighting them.
I have neither the crayons nor the time to explain it to you.

Update: I've killed two cougars with relative ease since I last posted, however I started those fights on my own terms.

Then, today, I was aggro'd by a Cougar I didn't see as I climbed down a cliff, and it landed its pounce on me. It chainstunned me again. I couldn't get a jump or stomp or anything off. Does Feral Defense lower stun time, or? It seems like if I get pounced one time I am just screwed. My character is pretty offense heavy, though.

Basically, if I know I'm going into the fight, I will very likely win (2-0 so far), but if not and I get pounced I just die (slowly).

Is this true for everyone? What am I doing wrong? I couldn't jump, etc. Do you need to be using Regain Composure?

animals can and occasionally will stunlock you. Bears can do it too, with their stun attack.

Oh, so Feral Defense doesn't reduce stun duration? I don't have a lot of it. My crappy suit is damage-oriented.
