As I understand it - you're focusing on PvE combat, not PvP? Or are we supposed to discuss both here?
A lot depends on your humours. The earlier you start working on them - the easier and faster will be killing animals. I'm not saying that you shouldn't be able to kill some rabbits and crickets in the very beginning [which isn't also impossible], but it might take quite a while before you can attack and kill bigger animals. Tactics also mean a lot, it is much easier to not chase the animals [after they're aggroed] and wait for them to attack you instead, that way you have a chance to dodge the animals attack and advance upon your prey. Using some obstacles as a natural defence [cliffs, fallen trees] I could easily take on a deer with 8-12 humours, when I could withstand only 1 or even none of it's charges. If you will stay in the game for long enough you will eventually find out that the animals are not any kind of real challenge.
