I don't see an issue with animals in houses or sleds. Am I missing something?

Since you said that sign posts were changing, they were asking if they need to move or butcher existing dead animals they have on sleds or in houses. You have made it clear you don't like sign posts as storage, and people leave entire animals for storage. I personally have what looks like a zoo in my mine, and I think everyone just wants to know if they need to butcher everything before the patch. Just to clarify.

Ah, I see. No, I don't have a problem with people hoarding and storing carcasses. I suppose in the future we may make a decay mechanic that turns the meat to rotted meat only good for compost, or something of the sort. Nothing like that planned for this patch though.

I don't get it. No storing mats in signposts, and no alt vaulting. Yet, I can keep a carcass forever by putting it in a leanto and someday soon the quality of the water used in pots won't matter. Either you are going for greater immersion in the game world or you are not.

I see your need to greater immersion, and as such promise to visit your base at least once after the patch to delete your animals and give you the experience you are looking for.
