We just fill our compost bins with the meat shreds we get from hunts, Or if we are really low then just go on a few deer hunts, Put the whole lot in and its pretty easy to keep up. I think I filled about 6 bins yesterday with little effort, But then again I don't really farm so I'm not sure how long they are going to last :D

You can't put wood choppings in a coop. You can put them in compost bin though.
Earthworms give 2.0 in a coop and 1.0 in a bin.
Seaweed gives 3.0 in a coop.
Roasted meats give half of what raw meats give, so roasted shreds +0.5, roasted cut +1, roasted steak +2.
Seeds give +0.1 per seed, so 10.0 for 100 seeds.
Pumpkin flesh gives 1.0, and full pumpkin gives up to 7.5 (1.5 from seeds, 6 from flesh)
Turkey droppings give 1.0, but only in compost bin.

I'm not sure if anyone answered this specifically: Enders bar shows % filled, the number is the actual value of "compost produced" each item generates. A 100% full compost bin is not 100 units of compost, so you won't see enders matching with what the game says for value. There's no bug with that.

As to the rest of the problem: Compost taking too much stuff. Eh, I'm not sure I agree. I lived near a game trail and hunted deer to fill them (about 20 bins or so). It wasn't too bad.
It's been neat to see the evolution of a game. Salem has come so far, and still has far to go. Although frustrating, I think it's been an experience worth the effort.
