Salem needs Potatoes! You could have "Russets" and "Sweet Taters" They look like a small leafy bush above ground. With many leaf options, as there are tonnes of both types of plants with many variants. And this would allow the use of Starch once you extract it with the press from the potatoes and water you would dump in and leave for a while. Starch could be used for making paper or adding nice stiffness to some collars for defensive slotting somehow a starched insert of some kind and a way to add starched cloth for clothing patterns and other projects.

While I realize this idea isn't about trees it is about foragable plants and I didn't know where to put it in the forum, I apologize if it is in the wrong place. I also still think the large maples should give a sweet sap we could use for syrup and possibly to have player made maple sugar!

The first Americans also learned how to grow avocados early on apparently. :D Another type of oil could be refined from the seed OR planted, the seed could also yield higher tier plants but the beloved gelatinous lard could also be a rare find from slicing into the fruit! then have a RARE chance for a CUTTING to show up in the rt click menu to possibly get an avacado tree to sprout. The chance for the cutting to sprout would be closely related to the agricultural/forestry/botany proficiencies.

The indigenous population grew them because they knew these benefits, they taught us to grow them once the new settlers found out how rich they were in helpful fats and nutrients to keep one healthy. Using the oil, which is NOT pressed from the seed as I erroneously suggested in the OP, it is pressed from the pulp of the fruit, also has some of the benefits and can be used in different manner than using the fruit pulp. Or would you possibly try to fry meat in avocado pulp? I'd rather use the oil ;)

These would probably be found in the dryer areas of the map like badlands.
