I have the same problem. I have searched my entire drive and there is not salem.cfg. I also don't see a salem folder. Is there any other way to reset the video settings?

Configurations to Java Web Start programs are stored in Java locations, namely in the Java cache or in the Registry. The other files and locations are dependent on custom clients.

If I recall a post from loftar correctly, you should be able to use the command console from the log in screen for the default client. I've posted details for that in this thread: viewtopic.php?f=5&t=507. The command you want is :gl light vlight. This will turn off shadows and set it to the default shader processor.
I am a moderator. I moderate stuff. When I do, I write in this color.

as an afterthought: C:\Users\<name>\Salem is the folder used by ender's client (and possibly others). While you really should consider using it, the vanilla client does not store its config there, and magicman's suggestion is the way to go.
I have neither the crayons nor the time to explain it to you.
