Dont get me wrong I KNOW what you are saying, and I totally agree that something needs to be done.. but I think looking at water is a step in the wrong direction and the impacts of all parts need to be considered taking into account natural limits. Yes water, lime and granite should have an impact.. but if you can only get <10% of these they should have minor impact (maybe hard capping purity of final foods to 50ish percent without the expensive alchemical interference. 100% will never be attainable again is the goal. However in order to achive this they have severely gimped the start up of any purity grind.. I dont want to be gifted purity.. but I feel the amount of grinding we are doing is simply turning many many players away.

Obviously, if wells were to get purity, something about the Woo Woo Wand would have to change. Maybe you could 'soak' it in purity water to reset it's purity to match the water's. That way it would be exactly like grinding mines.
Lime has no impact on purity of bars if you run straight ore. It is true though, running a single purity bar takes a few hours of work at the smelters, while mixing up some milk of lime and dumping it in a trough with dirt takes a lot less time.
Why would you hard cap purity of foods at 50%? Why do you think 100% purity being unattainable is a goal? That's like saying an MMORPG caps out at level 100, but you're not allowed to go above level 70. I don't think the devs or anyone want 100% purity to be impossible, I think they want it to be very very difficult and time consuming to get to. Even more than it used to be.
The real problem we're having now, is that it's difficult to even get started in purity. Partly, that's because so much hinges on the trees. This change to tiering seems like a step in the right direction, disconnecting some of the better things from purity a little bit. But really, it should be easy to get to a purity of about 15%, and any mid game player who is just putting down farms should be able to get there with a couple weeks of effort, alone, without buying purity saplings or anything. It should be tougher to get to about 30% but any hermit with a well developed base should be able to do it. It should take much longer and a lot of work to get to 50%-55% so that you generally need the resources of a town of at least a few people to reach that goal. And beyond that should be Possible, but not at all easy. What we have right now is that it takes a very dedicated and hard working and advanced hermit just to get to 7-10% and towns not able to go more than a few percent beyond that.
