Maybe there could be some sort of more complex form of maintenance/upkeep involved to offset the benefits, eg:
In the context menu for the greenhouse it displays the current humidity which you have to add more water to in order to raise, if you raise it too high then it can negatively affect crops but there could be a "sweet spot" of 30-70% across the humidity spectrum where plants gain slight benefit, and significant benefit in the 45-55% range.
Different types of plants require different ranges across the humidity spectrum, requiring the most devout gardener to build many separate greenhouses and meticulously keep track of each of their humidity levels.
Seasons could affect how quickly humidity drops and how much water it takes to raise it.
