I initially thought about making bonemeal. But maybe it would also be an option to put them on a stick and place them outside of a claim.. or even seperate the bones and use the skull for some inspirational craft...
I know we discussed about use of dead bodies. I would just like to raise the use of the skeleton in specific.
My thought is they might eventually have something to do with Witchcraft and/or the Devotion system. Death is a spiritually powerful and significant thing in folklore and religion. If you wanted to have ingredients for spells or especially nasty and destructive potions, human remains would be a good candidate. From a game perspective, this is also true because someone has to DIE for that, which is big.
On the religion/Devotion side, burying people in a prompt and proper fashion would be a Devout action, and a contingent responsibility on the God Fearing Pilgrim community. They would naturally be inclined to quarrel with Witches who might prefer to use the body for Stuff, or who could derive some benefit/slap the congregation in the face by desecrating burials and/or robbing tombs.
