How do I pick?

Check out the politics of each server, particularly the controlling group.
Plymouth is controlled by the Tribe, you have to pay taxes or die.
Roanoke is controlled by the Candy Gang, this is whats currently going on with them: viewtopic.php?f=6&t=7368
Jamestown lacks anyone in control of the entire server, Darwoth is the most powerful player but most areas either have no one in control or are under the control of a town or a small regional alliance.
If you don't want to deal with a lot of laws and politics then I would suggest Jamestown, some areas are fairly lawless but you will usually be fine if you just act smart and build good defenses.
