When you use the Dig action on a limestone tile you will dig up a limestone boulder which you will be carrying over your head. You may then drop the boulder and chip up to 5 pieces of lime from it before it disappears, and you may then dig another boulder to get more.
There are no lime mines

This is the best way to get lime by the way and once you become more civilized is a mandatory.
Ideally you will want to have an alt with quarrying that will locate a nice sized limestone field as you call it. Eventually you will build stampers to crush these lime boulders for you reducing phlegm cost and need on work food. It is also something that you can do while semi-afk and not paying 100% attention to the game. Then you want to build some Stone Hedge corner posts to store the lime. 1 tile will hold 45 lime.
You are now able to transfer thru Roanoke to your main base/production facility quick and easy. The bigger your base gets the more places you can build leanto's to claim to reduce on distance travelled after a lime transfer. You will end up saving a lot of time doing this instead of building near a limestone field and sledding the lime back with chests (something I did personally starting out and hated)
