I keep finding Easter eggs in hollow tree stumps. Is this because they spawned during the Easter event and never got collected hence why they are still in the stumps, or is there still a small chance they can spawn?

Blue, orange, and pink eggs spawn during the event only, but persist after the event ends.

Red eggs, however, persist only up to a few days after the event ends, because the fertile turkey hen inside hatches and then dies of starvation, leaving behind a dead wild turkey.

Ahhhhh that is why I keep finding the odd dead turkey in a tree stump.

Or maybe Easter event is still on the only thing disabled are red easter eggs ?
