I am extremely excited for this full wipe and to start playing Salem again

We've been developing for a good, long while, and will soon be ready to drop a fairly sizeable patch on y'all, containing, amongst other things, quite sizeable reworks of character proficiencies and the gluttony system.

Can anyone elaborate on how the character proficiencies and gluttony system are changing? I'm more concerned about this than anything else. Is the game drastically going to change?

Yes very drastically.

I wish the servers would just be reset already and we can start on the new world. It's the in between time period that drives me nuts. "Do I want to play right now?" "No because it won't mean anything in a week" I want to play, but not if the work is pointless...

Aside from the first posts in the Christmas Update thread and this thread, no one really knows what's changing or how. I too would like to know more, but they're notoriously uncommunicative.

Too twitch based (i.e. how good hand-mouse coordination you have); people here prefer turn-based combat with very little twitch demand.
